- Add orange and lemon juices, butter, ginger and ½ tsp salt to Instant Pot.
- Slice carrots diagonally ½-in thick and add them to the pot. Drizzle with maple syrup. Cover and lock the lid.
- Cook on high pressure for 3 minutes. Use quick release method to release pressure and open lid. Press [Cancel].
- Press [Saute] and simmer, stirring often until the juice thickens and glazes the carrots, about 5 minutes. Sprinkle with parsley, if desired.
