Anjou pears, halved lengthwise 

3 tbsp.

unsalted butter, cut into 1/2-inch cubes

Crème fraîche or mascarpone, for serving

  1. Heat oven to 375°F. Arrange pears, cut sides up, in shallow baking dish; sprinkle with sugar and cinnamon, then top each pear with 1 butter cube.
  2. Carefully pour wine into bottom of pan. Sprinkle currants over pears (it’s fine if some fall into wine) and bake until pears are tender, 40 to 50 minutes. Let cool 5 to 10 minutes.
  3. Transfer pears to plates and serve, drizzled with pan juices and currants and dolloped with crème fraîche if desired.
