  1. In a medium bowl, whisk together vinegar, oil, and 1/2 teaspoon each salt and pepper. Add chickpeas, tomatoes, cucumber, olives, red onion and toss to combine; fold in feta. 
  2. Evenly divide baby spinach among wraps, then top with chickpea salad and roll tightly.
