  1. Cook rice per package directions. In small bowl, toss onion with 2 tablespoons lime juice and 1/4 teaspoon salt; set aside.
  2. Meanwhile, heat 1 teaspoon oil in large saucepan on medium. Add curry paste and cook, stirring often, until fragrant, about 3 minutes. Stir in coconut milk and 1 cup water, add cilantro bunch, and bring to a simmer. Simmer 5 minutes.
  3. Discard cilantro, add shrimp, and cook until just opaque throughout, 4 to 5 minutes. Remove from heat and stir in fish sauce and remaining 3 tablespoons lime juice. Serve over rice, topped with cashews, pickled onion, and cilantro if desired. Serve with lime wedges.
