  1. In a bowl, whisk together vinegar and honey to dissolve. Add nectarine slices and toss to coat; let marinate 10 minutes. Add olive oil and black pepper and toss to coat.
  2. Grill or toast bread and spread with ricotta cheese, then spoon nectarines and juices on top.
