Broccoli gets a bad rap, but its no myth that it has beaucoup health benefits and deserves to be a go-to side for quick and healthy dinners.

While many vegetables are fine to buy frozen, we recommend buying fresh broccoli when your plan is to roast it. Look for broccoli with firm stems and florets. (Yellow, limp florets and damp or decayed leaves are telltale signs that the broccoli is starting to spoil.)

We also suggest keeping roasted broccoli in the fridge for one or two days max. Even though it won’t spoil, the broccoli won’t hold as much flavor after three days. Catch our roast recipe below — and when you’re ready to switch things up, know that it can also be steamed, shaved, or puréed!

Try this 15-minute recipe to make cheesy, crispy broccoli:

What you’ll need:

• 1 head broccoli

• 1 tbsp. olive oil

• 1/4 tsp. salt

• 1/4 tsp. red pepper flakes

• 1/4 tsp. black pepper

• 1 hunk Parmesan cheese (as little or as much as you’d like)

Step 1: Trim Florets

After washing the broccoli, use a chef’s knife (check out our favorites!) to cut the broccoli head into florets. Cut ’em into whatever size you like — long stems, short stems, you name it.

Step 2: Season and Toss

Toss broccoli florets with olive oil, red pepper flakes, salt, and pepper. Roast for 15 minutes at 425°F. This method works best with fresh veggies — we recommend steaming frozen broccoli because it is too wet and soggy to roast.
