Ingredients
Filling
- 1 lb.
Golden Delicious apples, peeled, cored, and sliced 1/2 in. thick
- 1/2 lb.
Granny Smith apples, peeled, cored, and sliced 1/2 in. thick
- 1/2 tbsp.
flour
- 1/2 tsp.
lemon zest
- 1/8 tsp.
fresh grated nutmeg
- 1
sprig fresh thyme, stripped
- 2 tbsp.
sugar, divided
- 1
large egg, beaten
- 2 tbsp.
apricot jam
- 1 tbsp.
lemon juice

Crust
- Step 1To food processor, add flour, sugar, and salt and pulse twice to combine. Add butter and pulse until mixture forms pea-size crumbs.
- Step 2Add 4 tablespoons ice water, pulsing until dough forms large clumps and holds together when squeezed (if necessary, add remaining water 1 teaspoon at a time). Do not overmix.
- Step 3Transfer dough to piece of plastic wrap and shape into 1-inch-thick disk. Wrap tightly and refrigerate until firm, at least 1 1/2 hours and up to 2 days.
- Step 4Heat oven to 375°F. Line baking sheet with parchment paper.
- Step 5Working between 2 pieces of parchment, roll disk to slightly thinner than 1/4 inch thick. Using small bowl (7 to 8 inches wide) as a guide, cut 3 circles from pie crust. Place crusts on prepared baking sheet. Reroll and cut 1 more circle from scraps.

Filling
- Step 1In large bowl, toss apples, flour, zest, nutmeg, thyme, and 1 tablespoon sugar. Divide apples among crusts, leaving 1 1/2-inch border on each. Fold border over apples.
- Step 2Lightly brush crusts with egg. Sprinkle galettes with remaining tablespoon sugar and bake until crusts are golden brown and apples are tender, 20 to 30 minutes. Let cool at least 10 minutes.
- Step 3In bowl, combine apricot jam and lemon juice, then brush over galettes. Serve with whipped cream.
