- In food processor, pulse Cheddar and egg whites until smooth. Add flour and black sesame seeds; pulse to combine.
- Divide mixture (it will be sticky) between 2 large sheets of parchment paper cut to the size of a cookie sheet. Cover each with additional sheet of parchment and roll until paper-thin.
- Transfer paper (and dough) to 2 cookie sheets and freeze until firm, 20 minutes.
- Meanwhile, heat oven to 300°F. Discard top layer of parchment and bake until golden and crisp, rotating halfway through cooking, 45 to 50 minutes total. Let cool, then break into pieces.
