beefsteak tomatoes (red and yellow)

1 lb.

seedless watermelon (flesh only)

1 tsp.

large seedless cucumber, peeled

1 tbsp.

extra virgin olive oil

Flaky sea salt, cracked pepper, and fresh mint, for serving

  1. Cut beefsteak tomatoes, watermelon, cucumber, and feta into large cubes. Cut cherry tomatoes in half and arrange all on a platter. 
  2. Drizzle with oil, then sprinkle with flaky salt, cracked pepper, and mint.
