Napa cabbage (about 11/4 lbs), cored and cut lengthwise, then into 1-in. pieces

- Heat grill to medium-high. Cut green cabbage into 4 wedges, leaving core intact. Brush with 1 tablespoon oil, then place on grill flat side down and cook until charred, 3 to 4 minutes per side.
- Meanwhile, in bowl, whisk together lime juice, vinegar, brown sugar, pepper flakes, remaining 3 tablespoons oil, and 1/2 teaspoon salt.
- Transfer green cabbage to cutting board and cut into 1-inch pieces. Add to bowl with dressing along with Napa cabbage and toss to coat; fold in mint and sprinkle with peanuts.
