- In small saucepan, combine split peas with 2 1/2 cups water and bring to a boil, skimming foam that rises to surface. Lower heat and add onion, garlic, bay leaf, turmeric and 1/2 teaspoon salt and simmer until split peas are very tender, 50 to 60 minutes.
- Discard bay leaf and transfer split pea mixture, including any liquid, to food processor. Add olive oil and lemon juice and puree until smooth.
- Transfer to serving bowl, drizzle with additional olive oil and top with red onion, parsley and sprinkle of paprika if desired. Makes 2 1/2 cups.
