Potatoes are well-loved because they can last for weeks on end (literally). When stored in your pantry, potatoes can last up to three weeks — but that time doubles when potatoes are stored in the refrigerator.

For easy weeknight dinners, baked is the way to go. While sweet potatoes reap more nutritional benefits, regular ol’ white potatoes are a blank canvas for a smorgasbord of nutrient-rich toppings (or gobs of cheese and bacon).

Never bake a potato without piercing it first. Prick them with a fork or knife to let the steam cook the insides without creating a mess in your oven.

The following recipes are a staple no matter what kind of potato variety you choose. Once cooked, potatoes can be stored in an airtight container for up to 5 days.

Step 1: Pierce Potatoes

Using a fork or butter knife, prick the potato from all angles, allowing it to cook evenly.

Step 2: Bake In Oven

Stick them directly on the rack or on a baking sheet. For sweet potatoes, we recommend using a baking sheet since they typically leave a sticky residue.

Why do some people bake them in aluminum foil while others leave their potatoes bare? It’s personal preference. Aluminum foil allows for a softer potato skin and traps in the heat. When baked directly in the oven sans foil jacket, the skin is extra crispy.

Option 1: Baked Potato

First, prick the potatoes with a fork. Place in the oven directly on the rack and bake for 45 minutes at 450°F. Then, cut the potatoes in half and add your desired toppings. For our classic recipe, top with butter, sour cream, and chives. Lighten it up by swapping sour cream for Greek yogurt and stuffing with a medley of vegetables, including broccoli, spinach, tomatoes, beans, and avocado. Make it a full meal by adding protein, such as bacon, chili, shredded beef, pulled pork, and more.

Option 2: Twice-Baked Potato

This creamier — and cheesier — potato is ultra-rich and decadent, perfect for a holiday meal or hearty Sunday dinner. To make, start by pricking the potatoes with a fork. Place on a cookie sheet and bake for 45 minutes at 450°F. Once baked, cut potatoes down the middle and scoop insides into a bowl. Add butter, ricotta, shredded cheese, salt and pepper. Use a potato masher to mix the ingredients together. Fill the potato boats with the cheesy mixture and sprinkle with shredded cheese. Bake for 10 minutes at 450°F. Garnish with crispy bacon, sour cream, and chives — or the toppings of your choice!
