Gordon Ramsay‘s next adventure for National Geographic’s Gordon Ramsay: Uncharted will see the celebrity chef arriving in Laos, wherein he kayaks down the Mekong in search of cooking inspiration — and gets to learn all about how to properly prepare “toe biters,” aka giant water bugs, for a weekly meal.

In this exclusive clip from Sunday’s new episode, Ramsay is clearly distressed about what he’s about to dine on with his insect offering, but he manages to suppress his sneers and four-letter word usage long enough to give the insect kabobs a try, and, whaddya know, he actually kind of likes what he tastes.

“They don’t look appetizing,” he admits. “But my god, get inside that head and it’s like a cross between a sweet lobster and crab meat, and yeah, packed with protein. Big surprise.”

In the episode, Ramsay also gets his fill of other local delicacies, such as snail lettuce wraps and weaver ant eggs, and, as is custom for each installment of his new international travel/cooking show, he puts his own culinary skills to the test by making a banquet for the monks at the local temple.

Gordon Ramsay: Uncharted premiered on July 21 and has seen the master chef’s epicurean adventures extend to Peru, New Zealand, Morocco, and Hawaii. He’ll also make way to Alaska’s panhandle after his stint in Laos.
